Fettuccia Riccia with spinach, artichokes & crème fraîche




Another Friday flys by...not the perfect meal for after a workout and certainly not low carb, but delicious and easy to whip up in about 20 minutes. At 9PM this is a welcome quick fix.

I had a similar meal to this in Nice, France in 2004 while visiting a friend. She made this dish on a 1 burner hot plate in a tiny apartment hotel. We ate dinner on the bed since there wasn't a table in the room. The only chair was home to the alarm clock.

Ingredients & General Directions:

,enough Fettuccia Riccia for your party
,about 1.5 cups of chopped spinach (frozen cubes by Europe's Best), heat up until soft, add salt & pepper
,about 1/2 cup creme fraiche
,3 large artichokes (from a tin) coarsely chopped

Add the spinach first and distribute evenly, mix in the creme fraiche and toss in the artichokes.

You're done!
